5 Scrumptious Menu to Keep You Cool This Coming SUMMER!!!

The hottest month of the year is just days away. Most of us can’t wait to celebrate ‘Songkran’ when we have fun with water fight and enjoy a long holiday with family and friends. We would like to introduce 5 scrumptious menu to help you stay cool as well as keep your body balanced when things heat up outside. Some of these recipes are so simple that you can easily create a homemade meal.

  1. Khao Chae Chaowang
    The perfect way to beat the summer heat is this ‘dish from the palace’ which was a favorite among royalty and now has made the top hit menu in many Thai restaurants. Khao Chae comprises of rice soaked in icy jasmine scented water; served with delectable side dishes such as shrimp paste balls, fried stuffed shallots, sweet bell peppers stuffed with pork, shredded sweet pork or beef, stir-fried sweet pickled Chinese turnips with egg, as well as assortments of fresh vegetable. Each restaurant may pride itself on the secret recipe it has inherited, still fragrant and flavorful Khao Chae Chaowang is the most favorite summer menu for everyone.

  2. Cold Tofu Pudding and Hiyashi Chuuka (Cold Ramen)
    Trade hot noodle soup for something a bit cooler this summer. When things heat up outside, let’s chill with some Japanese cool dishes such as cold tofu pudding and cold ramen. These menu are much lighter and perfect for hot weather. Finish up your light & cool meal with iced matcha tea will certainly freshen up your day.

  3. Mango with Sticky Rice
    The simple yet delicious mango with sticky rice is one of the most popular Thai desserts. Once you take your first bite, you just can’t help falling in love with it. It is everybody’s favorite and so simple to make. You just soak glutinous rice overnight, then steam and sweeten it with coconut milk, sugar and a pinch of salt. Don’t forget to garnish the dish with a drizzle of coconut cream and a sprinkling of roasted mung beans. The creamy sticky rice incredibly complements the sweetness of fresh mango. A small note for those keeping an eye on waistlines: This is not a dish to indulge in everyday! It is sadly very high on calories. This little slice of heaven will add 450 calories to your diet (100 grams of sticky rice with 1 mango).

  4. Loy Kaew – Chilled Fruit in Scented Syrup
    Loy Kaew is a truly refreshing menu for the summer with added benefit of vitamins from fruit. On a scorching summer day or at the end of the meal, devour a bowl of chilled fruits Loy Kaew. This delightful menu is so easy to find and can be made with a variety of tropical fruits such as toddy palm, sala, and santol. You can stock up on it in the fridge, but trust me – these refreshing delights will be all gone before you know it!

  5. Homemade Fruit & Veggie Smoothie and Herbal Drinks
    To beat the heat in ‘sugar-free’ & ‘low-calorie’ style, homemade fruit & veggie smoothie and herbal drinks are perfect alternatives. In your smoothies, you can add different types of fruits, nuts, or anything that sounds good to you. Trying out new smoothie combinations can be a lot of fun. And if they are homemade, you 100% know what goes in there. So you can control the sugar amount yourself, and be sure that the fruits & veggies are properly washed and safe to eat. Recommended list of fruits & veggies that have a cooling effect on your body are: watermelons, cantaloupes, lemongrass, pennywort (gotu kola) juice, roselle juice, chrysanthemum juice.
